Pizza: at once so simple and yet so complex; so slight and yet so filling. That staple of collegiate cuisine; that bachelor basic; the perfect meal. Wouldn’t it be great to make it on one’s own, and quit putting the pizzeria owner’s kids through college?

Pizza Crust

Ingredients

Mix 1 cup flour, other dry ingredients & oil well; add water and mix until of an even consistency. Slowly add remaining flour, mixing all the while, forming a ball of dough. Coat hands with flour, turn out onto countertop and knead well. Put back in bowl, cover with damp towel and rise in warm oven for 15–20 minutes. Remove, flatten, spread & roll out onto pizza pan or stone.

Ingredients

Preheat oven to 500°. Spoon tomato sauce onto crust until it covers, well but thinly. Cast sugar over it, then spices. Top with cheese until no sauce can be seen; some add the toppings beneath the cheese and others above. Finally, drizzle with olive oil well and truly. Bake for 15 minutes.
