Banana Pancakes

A wonderful way to start the morning, these pancakes take about half an hour to make and serve two for breakfast or one for a full day's meal.

Ingredients

Oil & preheat a griddle over medium-high heat (I use position six on my 9-position stove). Mix dry ingredients in a small bowl, then mix the wet ingredients in a mixing bowl, mashing and stirring the bananas well (I use a masher, then whisk the mixture). If using powdered milk, reconstitute and beat well, else you'll get little chunks of dried milk in your pancakes. While stirring, pour the dry ingredients into the wet. Do not overstir; the batter should be a bit lumpy.

Ladle out about ¼ cup of batter for each pancake; cook until done.
